- 2 cups Corn
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese
- 1 Lime
- 2 cloves Garlic
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional)
Instructions
- Prep the Ingredients: Slice your chicken into large pieces, chop the garlic, and squeeze the lime for juice.
- Season the Chicken: Place the chicken in the slow cooker and sprinkle with garlic, onion powder, chili powder, and smoked paprika. Toss well.
- Add the Corn and Creaminess: Spoon the corn over the chicken, followed by the cream cheese and half the Cotija.
- Squeeze the Lime: Drizzle lime juice over the top.
- Set it Free: Cover and slow cook on low for 6-8 hours, or high for 4-5 hours.
- Finish Strong: Shred the chicken with two forks, mix everything, and top with remaining Cotija and fresh cilantro if desired.
