Description

Ingredients

  • 1 lb Boneless Chicken Breasts/Thighs
  • 2 cups Corn
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime
  • 2 cloves Garlic
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional)

Instructions

  1. Prep the Ingredients: Slice your chicken into large pieces, chop the garlic, and squeeze the lime for juice.
  2. Season the Chicken: Place the chicken in the slow cooker and sprinkle with garlic, onion powder, chili powder, and smoked paprika. Toss well.
  3. Add the Corn and Creaminess: Spoon the corn over the chicken, followed by the cream cheese and half the Cotija.
  4. Squeeze the Lime: Drizzle lime juice over the top.
  5. Set it Free: Cover and slow cook on low for 6-8 hours, or high for 4-5 hours.
  6. Finish Strong: Shred the chicken with two forks, mix everything, and top with remaining Cotija and fresh cilantro if desired.
