Description

A refreshing and nutritious quinoa salad packed with vegetables and a zesty dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.

Notes

  • Feel free to add other vegetables or proteins like chickpeas or feta cheese.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
