  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a mixing bowl.
  3. Beat together the sugar, brown sugar, and vegetable oil in a separate large bowl until fluffy.
  4. Add the pumpkin puree, eggs, and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Mix together cream cheese and powdered sugar in another bowl until smooth.
  7. Fill each muffin cup halfway with the pumpkin batter, then add a dollop of the cream cheese mixture, and cover with more pumpkin batter.
  8. Swirl the cream cheese mixture into the pumpkin batter using a toothpick.
  9. Bake for 20-25 minutes, or until a toothpick comes out clean.
  10. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Make-ahead tip: Prepare the cream cheese mixture a day earlier for optimal flavor. For a twist, try adding chocolate chips or nuts.
