Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a mixing bowl.
- Beat together the sugar, brown sugar, and vegetable oil in a separate large bowl until fluffy.
- Add the pumpkin puree, eggs, and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Mix together cream cheese and powdered sugar in another bowl until smooth.
- Fill each muffin cup halfway with the pumpkin batter, then add a dollop of the cream cheese mixture, and cover with more pumpkin batter.
- Swirl the cream cheese mixture into the pumpkin batter using a toothpick.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
