Description

Delicious and nutritious Protein Pop Tarts filled with strawberry jam, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup confectioners sugar
  • 2 tablespoons milk or water
  • 1/2 teaspoon vanilla extract for glaze

Instructions

  1. Preheat your oven to 170°C (325°F).
  2. Prepare your baking tray with parchment paper.
  3. Mix the dry ingredients: whole wheat flour, vanilla protein powder, sugar, and baking powder in a medium bowl.
  4. Combine the wet ingredients: applesauce, neutral-flavored oil, and vanilla extract in a small bowl.
  5. Make the dough by combining wet and dry ingredients until cohesive, adding ice-cold water if needed. Refrigerate for 15 minutes.
  6. Roll the dough between parchment paper to about 1/8 inch thickness; cut into 8 rectangles with a pizza cutter.
  7. Fill half the rectangles with strawberry jam, leaving a margin.
  8. Seal with the remaining rectangles, pressing edges and crimping with a fork.
  9. Bake for 10-15 minutes until golden brown.
  10. Cool on a wire rack and glaze with a mixture of confectioners sugar, milk, and vanilla extract.
  11. Let the glaze set before serving.

Notes

Customize with different jams or fillings. Make-ahead tip: refrigerate dough overnight.
