- 1 1/2 cups whole wheat flour
- 1/2 cup vanilla protein powder
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/4 cup applesauce
- 1/4 cup neutral-flavored oil
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam
- 1 cup confectioners sugar
- 2 tablespoons milk or water
- 1/2 teaspoon vanilla extract for glaze
Instructions
- Preheat your oven to 170°C (325°F).
- Prepare your baking tray with parchment paper.
- Mix the dry ingredients: whole wheat flour, vanilla protein powder, sugar, and baking powder in a medium bowl.
- Combine the wet ingredients: applesauce, neutral-flavored oil, and vanilla extract in a small bowl.
- Make the dough by combining wet and dry ingredients until cohesive, adding ice-cold water if needed. Refrigerate for 15 minutes.
- Roll the dough between parchment paper to about 1/8 inch thickness; cut into 8 rectangles with a pizza cutter.
- Fill half the rectangles with strawberry jam, leaving a margin.
- Seal with the remaining rectangles, pressing edges and crimping with a fork.
- Bake for 10-15 minutes until golden brown.
- Cool on a wire rack and glaze with a mixture of confectioners sugar, milk, and vanilla extract.
- Let the glaze set before serving.
Notes
Customize with different jams or fillings. Make-ahead tip: refrigerate dough overnight.
