Description

A delightful dish combining sweet and savory flavors with juicy chicken, tender rice, and zesty pineapple.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions, sliced for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper, cooking until softened.
  3. Add garlic and stir for 30 seconds.
  4. Add chicken pieces, cooking until browned and cooked through.
  5. Stir in pineapple chunks, rice, chicken broth, soy sauce, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover. Simmer for about 20 minutes or until rice is cooked.
  7. Remove from heat, fluff with a fork, and garnish with sliced green onions before serving.

Notes

For added flavor, marinate the chicken pieces in soy sauce for about 30 minutes before cooking. You can also add other vegetables for extra nutrition.
