Instructions
- Preheat the oven to 325°F (163°C).
- Prepare the crust by combining graham cracker crumbs, 1/4 cup sugar, and melted butter; press firmly into the bottom of a springform pan.
- Mix the filling by beating cream cheese, 1 cup sugar, and vanilla extract until smooth.
- Incorporate the eggs one at a time, mixing well after each addition.
- Fold in the chopped peaches, cinnamon, and nutmeg until combined.
- Assemble the cheesecake by pouring the mixture over the crust and bake for 50-60 minutes until set but slightly jiggly.
- Cool at room temperature and refrigerate for at least 4 hours before serving.
