Instructions
- Season the chicken cutlets generously with salt and pepper.
- Set up an assembly line: dredge each cutlet in flour, dip in beaten eggs, and coat in the breadcrumb-Parmesan mix.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Cook the chicken cutlets for 3–4 minutes on each side until golden brown and crispy.
- Remove the cooked chicken to a plate and let it rest.
- In the same skillet, lower the heat and melt the butter, then add minced garlic and stir.
- Pour in chicken broth, followed by heavy cream and additional Parmesan, simmering until thickened.
- Return the chicken to the skillet, spoon the sauce over, and garnish with parsley or thyme.
- Serve with creamy mashed potatoes or roasted vegetables for a complete meal.
