Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season the chicken cutlets generously with salt and pepper.
  2. Set up an assembly line: dredge each cutlet in flour, dip in beaten eggs, and coat in the breadcrumb-Parmesan mix.
  3. Heat olive oil in a skillet over medium-high heat until shimmering.
  4. Cook the chicken cutlets for 3–4 minutes on each side until golden brown and crispy.
  5. Remove the cooked chicken to a plate and let it rest.
  6. In the same skillet, lower the heat and melt the butter, then add minced garlic and stir.
  7. Pour in chicken broth, followed by heavy cream and additional Parmesan, simmering until thickened.
  8. Return the chicken to the skillet, spoon the sauce over, and garnish with parsley or thyme.
  9. Serve with creamy mashed potatoes or roasted vegetables for a complete meal.

Notes

Make ahead by preparing chicken and sauce separately, reheat gently before serving. For a crispy effect, consider using an air fryer.
