Description

Deliciously crispy mashed potato balls wrapped in savory bacon and filled with gooey cheddar cheese, perfect for any gathering.


Ingredients

Scale
  • 2 cups cold mashed potatoes
  • 1 egg
  • Salt & Black Pepper, to taste
  • ½ cup dry bread crumbs
  • Cheddar cheese, cut into 1-inch chunks
  • Bacon slices (1 slice per bomb)
  • Oil for frying (canola recommended)
  • Sour cream, for dipping

Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine cold mashed potatoes, beaten egg, salt, and pepper. Stir until fully incorporated.
  2. Form the Balls: Scoop out a portion of the potato mixture and enclose a chunk of cheddar cheese inside, forming a ball.
  3. Coat in Bread Crumbs: Roll each ball in dry bread crumbs until evenly coated.
  4. Wrap with Bacon: Wrap one slice of bacon around each potato ball and secure with a toothpick.
  5. Heat the Oil: Heat oil to 175°C (350°F) in a frying pan or deep fryer.
  6. Fry the Bombs: Fry 1-2 bombs at a time until golden-brown.
  7. Drain and Serve: Lift out with a slotted spoon and drain on paper towels. Serve warm with sour cream.

Notes

Use cold leftover mashed potatoes for the best shape. Don’t overcrowd the pan to keep the oil temperature consistent.
