A comforting, flavorful dish combining baked potatoes with seasoned ground beef, fresh toppings, and a creamy sauce.

- 4 large Russet or Yukon Gold potatoes
- 1 lb ground beef or turkey
- 2 tbsp taco seasoning
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup sour cream
- 1 lime, juiced
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/2 avocado, sliced
- 1 jalapeño, sliced
- Salt and pepper to taste
- Olive oil (if roasting potatoes)
Instructions
- Wash and scrub the potatoes under cold water. In a large pot, cover the potatoes with water and bring to a boil over high heat. Reduce to a simmer and cook for 20-25 minutes until tender.
- Alternatively, chop the potatoes into bite-sized pieces, season with olive oil, salt, and pepper, and roast in a preheated oven at 425°F for 25-30 minutes, flipping halfway through.
- While potatoes are cooking, heat a non-stick skillet over medium heat. Add ground beef or turkey, breaking it apart. Brown for 5-7 minutes, then stir in taco seasoning and a splash of water. Simmer for another 5 minutes.
- Once potatoes are cooked, drain and let cool slightly. Mash if desired, or leave whole. Spoon the seasoned meat over the potatoes.
- Top with cheese, diced tomatoes, green onions, jalapeños, sour cream, and avocado. Drizzle lime juice over the top.
- Serve warm and enjoy the mix of flavors and textures!
