Description

A comforting, flavorful dish combining baked potatoes with seasoned ground beef, fresh toppings, and a creamy sauce.


Ingredients

  • 4 large Russet or Yukon Gold potatoes
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 avocado, sliced
  • 1 jalapeño, sliced
  • Salt and pepper to taste
  • Olive oil (if roasting potatoes)

Instructions

  1. Wash and scrub the potatoes under cold water. In a large pot, cover the potatoes with water and bring to a boil over high heat. Reduce to a simmer and cook for 20-25 minutes until tender.
  2. Alternatively, chop the potatoes into bite-sized pieces, season with olive oil, salt, and pepper, and roast in a preheated oven at 425°F for 25-30 minutes, flipping halfway through.
  3. While potatoes are cooking, heat a non-stick skillet over medium heat. Add ground beef or turkey, breaking it apart. Brown for 5-7 minutes, then stir in taco seasoning and a splash of water. Simmer for another 5 minutes.
  4. Once potatoes are cooked, drain and let cool slightly. Mash if desired, or leave whole. Spoon the seasoned meat over the potatoes.
  5. Top with cheese, diced tomatoes, green onions, jalapeños, sour cream, and avocado. Drizzle lime juice over the top.
  6. Serve warm and enjoy the mix of flavors and textures!
