- 1 lb beef chuck, cut into chunks
- 4 cups beef broth
- 2 cups potatoes, diced
- 2 cups carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef chunks in a single layer and brown on all sides for about 5-7 minutes.
- Remove the beef from the pot and set aside on a plate.
- In the same pot, add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the tomato paste, dried thyme, and rosemary for another minute.
- Return the browned beef to the pot and pour in the beef broth.
- Add the diced potatoes and sliced carrots; stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 1.5 to 2 hours.
- Taste and season with salt and pepper as desired before serving.
Notes
This stew can be prepared ahead of time and stored in the fridge or frozen for later use. Consider adding your favorite vegetables for customization.
