- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, chopped
- 1 bell pepper, diced
- 1/2 cup black olives, sliced
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup Italian dressing
- Fresh herbs (basil or parsley) for garnish
Instructions
- Cook the pasta according to package instructions, drain and rinse under cold water.
- In a large mixing bowl, combine cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, black olives, and cheddar cheese.
- Drizzle with Italian dressing and toss to coat thoroughly.
- Layer the salad in a serving dish or clear glass bowl, starting with the pasta mixture and adding layers of vegetables and cheese.
- Garnish with fresh herbs and chill in the refrigerator for at least 30 minutes before serving.
