Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×13-inch baking pan with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy (approximately 2-3 minutes).
- Beat in the eggs one at a time, mixing well after each addition.
- Add the vanilla extract, almond extract, and lemon zest, blending until fully incorporated.
- Whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
- Gradually add the dry mixture to the wet ingredients, stirring just until combined.
- Transfer the dough evenly into your prepared baking pan.
- Bake for 22 to 25 minutes until lightly golden.
- Cool completely on a wire rack.
- Whisk powdered sugar, milk, and vanilla until smooth; spread over the cooled cookie base.
- Sprinkle sanding sugar over the icing immediately.
- Let the icing set for about 30 minutes before slicing.
