Description

Ingredients

  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 1 teaspoon vanilla extract (for icing)
  • Purple, green, and gold sanding sugar or sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper.
  3. Cream together the softened butter and granulated sugar until light and fluffy (approximately 2-3 minutes).
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Add the vanilla extract, almond extract, and lemon zest, blending until fully incorporated.
  6. Whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
  7. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  8. Transfer the dough evenly into your prepared baking pan.
  9. Bake for 22 to 25 minutes until lightly golden.
  10. Cool completely on a wire rack.
  11. Whisk powdered sugar, milk, and vanilla until smooth; spread over the cooled cookie base.
  12. Sprinkle sanding sugar over the icing immediately.
  13. Let the icing set for about 30 minutes before slicing.
