A satisfying low-carb breakfast dish made with seasoned sausage, fluffy scrambled eggs, and fresh spinach.
Ingredients

- 4 breakfast sausage links or patties (turkey, pork, or plant-based)
- 4 large eggs
- 2 cups fresh spinach, chopped
- Salt, to taste
- Pepper, to taste
- 1 tablespoon olive oil or butter
Instructions
- Heat a non-stick skillet over medium heat and add olive oil or butter.
- Crumble the sausage into the skillet and cook until crispy and browned, about 5-7 minutes.
- In a bowl, crack the eggs and whisk with salt and pepper until frothy.
- Pour the whisked eggs over the cooked sausage in the skillet.
- Gently fold in the spinach as the eggs begin to set, about 3-5 minutes.
- Serve warm and enjoy!
Notes
Make-ahead: Cook sausages ahead and store in the fridge for up to three days. For a different cooking method, you can also use an air fryer.
