Keto Crispy Reuben Roll-Ups are a delicious low-carb snack that combines the classic flavors of a Reuben sandwich in a crispy, easy-to-eat format.

- 8 oz corned beef, sliced
- 4 oz Swiss cheese, sliced
- 1 cup sauerkraut, drained
- 4 large lettuce leaves
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Lay out the lettuce leaves on a clean surface.
- Spread a thin layer of Dijon mustard on each lettuce leaf.
- Layer the corned beef, Swiss cheese, and sauerkraut on top of the mustard.
- Roll the lettuce leaves tightly to form roll-ups.
- Brush the outside of the roll-ups with olive oil.
- Place the roll-ups on a baking sheet and bake for 10-12 minutes until crispy.
- Remove from the oven and let cool slightly before slicing.
- Serve warm and enjoy!
Notes
- For extra flavor, add a sprinkle of caraway seeds before rolling.
- These roll-ups can be made ahead of time and stored in the refrigerator.
- Serve with additional mustard for dipping.
