Description

Savory bacon-wrapped zucchini boats filled with creamy cheese, perfect for keto diets and family gatherings.


Ingredients

  • 4 medium zucchini
  • 8 slices of bacon
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: Chopped green onions or herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchini in half lengthwise and scoop out the center to create boats.
  3. Combine cream cheese, shredded cheddar, grated Parmesan, minced garlic, salt, and pepper in a bowl and mix until smooth.
  4. Fill each zucchini boat with the cheese mixture.
  5. Wrap each boat with a slice of bacon and secure with toothpicks if needed.
  6. Arrange the wrapped boats on a parchment-lined baking sheet.
  7. Bake in the preheated oven for 20-25 minutes until bacon is crispy and zucchini is tender.
