Description

Savory and sweet mini muffins combining pancake batter and sausage, perfect for breakfast or snacks.


Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a mini muffin tin generously with cooking spray.
  3. In a large mixing bowl, whisk together your pancake mix, milk, eggs, and syrup until smooth.
  4. Fold in the cooked sausage and shredded cheese gently.
  5. Fill each muffin cup about ¾ full with batter.
  6. Bake for 15 minutes until golden and firm to the touch.
  7. Let them cool for a few minutes before serving or storing.
