- 1 lb ground sausage, browned and crumbled
- 2 cups milk
- 2 eggs
- ¼ cup maple syrup
- 1 cup shredded cheese (cheddar or Colby jack)
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a mini muffin tin generously with cooking spray.
- In a large mixing bowl, whisk together your pancake mix, milk, eggs, and syrup until smooth.
- Fold in the cooked sausage and shredded cheese gently.
- Fill each muffin cup about ¾ full with batter.
- Bake for 15 minutes until golden and firm to the touch.
- Let them cool for a few minutes before serving or storing.
