Description

Ingredients

  • 2 cups mixed dried fruits
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup orange juice
  • 1/4 cup rum or brandy (optional)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a cake pan.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and rum.
  6. Fold in the mixed dried fruits and nuts.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, soak the dried fruits in rum or orange juice overnight.
  • This cake can be made ahead of time and stored for several days to enhance the flavors.
