Description

Delicious and crispy sweet potato hash browns perfect for breakfast, brunch, or as a side dish.


Ingredients

  • 2 large sweet potatoes, grated
  • 1 small onion, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional seasonings: garlic powder, paprika, or favorite spices

Instructions

  1. Grate sweet potatoes and onion using a box grater or food processor.
  2. Squeeze out moisture using a clean towel.
  3. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  4. Add grated sweet potatoes and onion to the skillet. Season with salt, pepper, and optional seasonings.
  5. Cook undisturbed for 5-7 minutes to form a crust on the bottom.
  6. Flip the hash browns using a spatula and cook for another 5-7 minutes until golden brown and crispy.
  7. Serve hot with desired toppings like Greek yogurt or hot sauce.

Notes

Make-ahead tip: Prep the grated mixture a day in advance. Store in an airtight container in the fridge and squeeze out moisture before cooking.
