Ingredients

- 2 pounds beef chuck, cut into chunks
- 1 cup barley
- 4 cups beef broth
- 1 can (14.9 oz) Guinness stout
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a tablespoon of oil in a large pot over medium-high heat and brown the beef chunks on all sides.
- Remove the beef and sauté the onions, carrots, celery, and garlic until softened, about 5-7 minutes.
- Stir in the tomato paste and let it cook for another minute.
- Return the beef to the pot, pour in Guinness and beef broth, and add barley and bay leaves.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours.
- Season with salt and pepper to taste before serving, and garnish with fresh parsley.
- Remove bay leaves before serving.
Notes
