Description

A hearty and comforting stew filled with tender beef, chewy barley, and vibrant vegetables, infused with the rich flavors of Guinness.


Ingredients

Scale
  • 2 pounds beef chuck, cut into chunks
  • 1 cup barley
  • 4 cups beef broth
  • 1 can (14.9 oz) Guinness stout
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a tablespoon of oil in a large pot over medium-high heat and brown the beef chunks on all sides.
  2. Remove the beef and sauté the onions, carrots, celery, and garlic until softened, about 5-7 minutes.
  3. Stir in the tomato paste and let it cook for another minute.
  4. Return the beef to the pot, pour in Guinness and beef broth, and add barley and bay leaves.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours.
  6. Season with salt and pepper to taste before serving, and garnish with fresh parsley.
  7. Remove bay leaves before serving.

Notes

This stew is perfect for make-ahead meals, as the flavors improve over time. You can even customize by adding other vegetables or herbs.
