Description

A vibrant and fresh Grilled Shrimp Bowl topped with creamy avocado, zesty corn salsa, and a rich creamy sauce that transports you to sunny beach gatherings.


Ingredients

  • 1 lb large uncooked shrimp, deveined
  • 2 ripe avocados
  • 1 cup fresh corn (or canned/frozen)
  • 1 lime, juiced
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup diced onions
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, toss shrimp with olive oil, salt, pepper, paprika, and chili powder.
  3. Grill the shrimp for 2-3 minutes per side until pink and opaque; set aside.
  4. Purge avocado and mix with lime juice, salt, and pepper.
  5. For corn salsa, combine corn, diced onions, cilantro, lime juice, salt, and pepper in a bowl.
  6. Mix sour cream or Greek yogurt with a splash of lime juice and spices for the creamy sauce.
  7. Assemble bowl: layer grilled shrimp, avocado mash, corn salsa, and drizzle with creamy sauce.
