Description

Delightful muffins filled with a rich cream cheese surprise, bringing warmth and comfort to your breakfast table.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup cinnamon-sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Combine the wet and dry ingredients until just mixed.
  5. Beat the cream cheese with the powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, add cream cheese mixture, then cover with more batter.
  7. Sprinkle cinnamon-sugar on top of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for a few minutes, then transfer to a wire rack.

Notes

For a twist, consider adding chocolate chips or nuts to the batter. You can also make a vegan version by substituting the eggs and cream cheese.
