Description

Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. While the cookies cool, prepare the glaze by whisking together the powdered sugar and milk until smooth.
  9. Drizzle the glaze over the cooled cookies and let it set before serving.
