- 4 flour tortillas
- 1 cup crumbled feta cheese
- 1 cup cooked spinach (fresh or frozen)
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- 1/2 teaspoon dried oregano
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the skillet: Begin by placing a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Layer the ingredients: Place one tortilla in the skillet, sprinkle half of the feta, followed by spinach, tomatoes, and olives. Season with oregano, salt, and pepper.
- Top with another tortilla: Lay another tortilla on top to create a layered quesadilla.
- Flip with care: Cook until golden brown then flip and cook the other side until the cheese melts.
- Cut and serve: Remove from skillet, let cool slightly, cut into wedges, and serve warm.
Notes
For best results, prepare ingredients ahead of time. Can be customized with different fillings or cooked using an air fryer.
