- 1 cup cottage cheese
- 2 cups fresh spinach (chopped)
- 4 large eggs
- 1 cup shredded cheddar cheese (divided)
- 1 small onion (finely chopped)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Nonstick cooking spray
Instructions
- Preheat your oven to 375°F (190°C) and generously grease your baking dish with nonstick spray.
- In a medium frying pan, sauté the finely chopped onion over medium heat until softened, approximately 5 minutes.
- In a large mixing bowl, combine the cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, black pepper, and half of the cheddar cheese. Mix until uniform.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheddar cheese on top.
- Bake for 30-35 minutes, or until the quiche is set and golden brown. Allow to cool slightly before slicing.
Notes
Make ahead by preparing the quiche the night before and refrigerating. Can also be made in an air fryer at 320°F (160°C) for 25 minutes.
