Description

Deliciously wholesome bites that combine cottage cheese, oats, and apples for a comforting treat perfect for breakfast or snacks.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt until fully mixed.
  3. Let the mixture sit for 5 minutes for the oats to absorb moisture.
  4. Scoop the mixture into the mini muffin pan, filling each cup almost to the top.
  5. Bake for 18–20 minutes until set and lightly golden. A toothpick inserted should come out clean.
  6. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These bites can be stored in the fridge for up to 4 days or frozen for up to 2 months.
