Deliciously wholesome bites that combine cottage cheese, oats, and apples for a comforting treat perfect for breakfast or snacks.
Ingredients

- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt until fully mixed.
- Let the mixture sit for 5 minutes for the oats to absorb moisture.
- Scoop the mixture into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes until set and lightly golden. A toothpick inserted should come out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These bites can be stored in the fridge for up to 4 days or frozen for up to 2 months.
