Description

A comforting dish featuring seared chicken breasts served over creamy garlic Parmesan rice, perfect for any occasion.


Ingredients

  • 2 chicken breasts
  • 2 cups rice (white or brown)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Sear the chicken for 6-7 minutes on each side until cooked through and golden brown. Remove and set aside.
  2. In the same skillet, melt the butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add rice and let it toast for about 1-2 minutes.
  4. Pour in heavy cream and bring it to a gentle simmer. Add Parmesan cheese and Italian herbs, mixing until combined.
  5. Return the chicken to the skillet, cover, and simmer for about 5 minutes to meld flavors.
  6. Garnish with fresh parsley before serving.

Notes

For added flavor, marinate the chicken before cooking. You can substitute the chicken with tofu or vegetables for a vegetarian version.
