- 2 chicken breasts
- 2 cups rice (white or brown)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Sear the chicken for 6-7 minutes on each side until cooked through and golden brown. Remove and set aside.
- In the same skillet, melt the butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add rice and let it toast for about 1-2 minutes.
- Pour in heavy cream and bring it to a gentle simmer. Add Parmesan cheese and Italian herbs, mixing until combined.
- Return the chicken to the skillet, cover, and simmer for about 5 minutes to meld flavors.
- Garnish with fresh parsley before serving.
Notes
For added flavor, marinate the chicken before cooking. You can substitute the chicken with tofu or vegetables for a vegetarian version.
