Description

A vibrant and healthy dip made from carrots and chickpeas, perfect for pairing with fresh vegetables.


Ingredients

  • 2 cups carrots, peeled and chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Assorted fresh vegetables for serving (e.g., bell peppers, cucumbers, cherry tomatoes)

Instructions

  1. Steam the chopped carrots until tender, about 10-15 minutes.
  2. In a food processor, combine the steamed carrots, chickpeas, tahini, olive oil, lemon juice, garlic, cumin, salt, and pepper.
  3. Blend until smooth, adding water as needed to reach desired consistency.
  4. Taste and adjust seasoning if necessary.
  5. Transfer the hummus to a serving bowl and serve with assorted fresh vegetables.

Notes
