Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Assorted fresh vegetables for serving (e.g., bell peppers, cucumbers, cherry tomatoes)
Instructions
- Steam the chopped carrots until tender, about 10-15 minutes.
- In a food processor, combine the steamed carrots, chickpeas, tahini, olive oil, lemon juice, garlic, cumin, salt, and pepper.
- Blend until smooth, adding water as needed to reach desired consistency.
- Taste and adjust seasoning if necessary.
- Transfer the hummus to a serving bowl and serve with assorted fresh vegetables.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This hummus can be stored in the refrigerator for up to 5 days.
