- 1 teaspoon onion powder

- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 bell peppers (red, green, or yellow)
- 1 medium onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil (for sautéing)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- In a small bowl, mix the Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and black pepper. Coat each chicken breast generously with the spice mixture.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side. Remove chicken and let it rest.
- In the same skillet, add 1 tablespoon of olive oil and sauté the bell peppers and onions over medium heat for about 5-6 minutes. Stir in the minced garlic and cook for another 1-2 minutes.
- Slice the cooked chicken breasts into thin strips and combine them with the sautéed vegetables in the skillet. Cook together for an additional 2-3 minutes.
- Garnish with fresh parsley or cilantro and serve hot, optionally over rice or with crusty bread.
Notes
Consider marinating the chicken for extra flavor. Use a meat thermometer to ensure chicken is cooked to 165°F.
