Description

Ingredients

  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce
  • 1/2 cup sliced pickles
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 2 tbsp mustard

Instructions

  1. Prepare the brown rice according to the package instructions (approximately 30 minutes).
  2. While the rice simmers, heat a skillet over medium-high heat and add the lean ground beef, seasoned with salt and pepper.
  3. Cook the beef until browned (about 8 minutes), breaking it apart with a spatula.
