Description

Delightful bite-sized blueberry cheesecake bites with a creamy filling and a crunchy graham cracker crust.


Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup blueberries, fresh or frozen
  • 1/2 cup graham cracker crumbs
  • 2 tbsp butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend the cream cheese, sugar, and vanilla extract until smooth and creamy.
  3. Fold in the blueberries gently to avoid crushing them.
  4. Combine the graham cracker crumbs and melted butter until it resembles wet sand.
  5. Press the crust mixture into the bottom of each cupcake tin cavity.
  6. Spoon the cheesecake mixture over the crust in each cavity.
  7. Bake for 15 minutes until slightly jiggly.
  8. Cool completely and refrigerate for at least 2 hours.

Notes

Make these bites a day in advance for best flavor. They can also be made in an air fryer set at 300°F for 8-10 minutes.
