Delightful bite-sized blueberry cheesecake bites with a creamy filling and a crunchy graham cracker crust.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup blueberries, fresh or frozen
- 1/2 cup graham cracker crumbs
- 2 tbsp butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Blend the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Fold in the blueberries gently to avoid crushing them.
- Combine the graham cracker crumbs and melted butter until it resembles wet sand.
- Press the crust mixture into the bottom of each cupcake tin cavity.
- Spoon the cheesecake mixture over the crust in each cavity.
- Bake for 15 minutes until slightly jiggly.
- Cool completely and refrigerate for at least 2 hours.
Notes
Make these bites a day in advance for best flavor. They can also be made in an air fryer set at 300°F for 8-10 minutes.
