- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup celery, diced
- 1/4 cup fresh parsley, chopped
- 1/2 cup vodka
- 1/4 cup tomato juice
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside to cool.
- In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, bell pepper, red onion, celery, and parsley.
- In a small bowl, whisk together vodka, tomato juice, Worcestershire sauce, hot sauce, salt, and pepper until well blended.
- Pour the dressing over the pasta and vegetable mixture, tossing gently to coat.
- Cover and chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
For a family-friendly version, omit the vodka. This salad can be made a day in advance for improved flavor.
