Description

A vibrant and refreshing pasta salad inspired by the classic Bloody Mary cocktail, featuring rotini, fresh vegetables, and a zesty dressing.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup vodka
  • 1/4 cup tomato juice
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, bell pepper, red onion, celery, and parsley.
  3. In a small bowl, whisk together vodka, tomato juice, Worcestershire sauce, hot sauce, salt, and pepper until well blended.
  4. Pour the dressing over the pasta and vegetable mixture, tossing gently to coat.
  5. Cover and chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

For a family-friendly version, omit the vodka. This salad can be made a day in advance for improved flavor.
