Description

A comforting and flavorful soup featuring tender beef, hearty barley, and a symphony of spices, perfect for chilly evenings.


Ingredients

  • 1 lb beef, cubed
  • 1 cup barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 6 cups beef broth
  • 2 cups water
  • Salt and pepper to taste
  • Fresh herbs (parsley, cilantro) for garnish

Instructions

  1. Heat a large pot over medium heat and add a splash of oil. Brown the cubed beef in batches until golden, about 4-5 minutes.
  2. Add the chopped onion, followed by diced carrots and celery. Sauté until softened, around 5-7 minutes.
  3. Stir in minced garlic, cumin, coriander, turmeric, and cinnamon. Cook for an additional minute.
  4. Introduce the barley, beef broth, and water. Stir gently, then bring to a boil.
  5. Reduce the heat to low and let it simmer uncovered for about 60 to 90 minutes.
  6. Season to taste with salt and pepper.
  7. Serve hot, garnished with fresh herbs.

Notes

For an extra kick, consider adding a splash of lemon juice before serving. This soup can be made ahead for deeper flavors.
