- 1 lb beef, cubed
- 1 cup barley
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 6 cups beef broth
- 2 cups water
- Salt and pepper to taste
- Fresh herbs (parsley, cilantro) for garnish
Instructions
- Heat a large pot over medium heat and add a splash of oil. Brown the cubed beef in batches until golden, about 4-5 minutes.
- Add the chopped onion, followed by diced carrots and celery. Sauté until softened, around 5-7 minutes.
- Stir in minced garlic, cumin, coriander, turmeric, and cinnamon. Cook for an additional minute.
- Introduce the barley, beef broth, and water. Stir gently, then bring to a boil.
- Reduce the heat to low and let it simmer uncovered for about 60 to 90 minutes.
- Season to taste with salt and pepper.
- Serve hot, garnished with fresh herbs.
Notes
For an extra kick, consider adding a splash of lemon juice before serving. This soup can be made ahead for deeper flavors.
