- 1 slab of pork shoulder
- 2–3 large sweet potatoes
- BBQ sauce (to taste)
- Salt and pepper
- Olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Pat the pork shoulder dry and season generously with salt and pepper. Sear in a skillet with olive oil for 5-7 minutes until golden brown.
- Transfer the pork to a slow cooker, add BBQ sauce, and cook on low for 8 hours.
- Peel and cube the sweet potatoes, toss with olive oil, salt, and pepper.
- Roast sweet potatoes on a baking sheet for 25-30 minutes, flipping halfway through.
- Shred the pork once cooked and combine with juices and additional BBQ sauce.
- Assemble the bowl with roasted sweet potatoes, shredded pork, and optional toppings.
