Description

A comforting bowl featuring tender pulled pork enveloped in BBQ sauce and roasted sweet potatoes, perfect for cozy meals.


Ingredients

  • 1 slab of pork shoulder
  • 23 large sweet potatoes
  • BBQ sauce (to taste)
  • Salt and pepper
  • Olive oil
  • Optional toppings: green onions, sour cream, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork shoulder dry and season generously with salt and pepper. Sear in a skillet with olive oil for 5-7 minutes until golden brown.
  3. Transfer the pork to a slow cooker, add BBQ sauce, and cook on low for 8 hours.
  4. Peel and cube the sweet potatoes, toss with olive oil, salt, and pepper.
  5. Roast sweet potatoes on a baking sheet for 25-30 minutes, flipping halfway through.
  6. Shred the pork once cooked and combine with juices and additional BBQ sauce.
  7. Assemble the bowl with roasted sweet potatoes, shredded pork, and optional toppings.
