- 2 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the sweet potatoes thoroughly under cold running water.
- Using a fork, prick each sweet potato several times on all sides.
- Place the sweet potatoes on a baking sheet with space between them.
- Drizzle the olive oil over the sweet potatoes and rub it into the skin.
- Sprinkle the salt and black pepper evenly on each potato.
- Bake the sweet potatoes for about 45-60 minutes until tender.
- While the sweet potatoes bake, shred the cooked chicken and mix in the BBQ sauce.
- Finely chop the red onion and cilantro.
- Once the sweet potatoes are done, cut a slit lengthwise down the center of each.
- Gently push the ends together to open them up for filling.
- Fluff the insides with a fork.
- Spoon in the BBQ chicken mixture and sprinkle with cheddar cheese.
- Return to the oven for an additional 5-7 minutes or until the cheese bubbles.
- Remove from the oven and top with fresh red onion, cilantro, sour cream, and lime juice.
Notes
These stuffed potatoes can be made ahead and reheated. Experiment with toppings and different proteins for customization.
