Description

Delicious bell peppers stuffed with a hearty mix of macaroni and chili, topped with melted cheese; a comforting meal perfect for family dinners.


Ingredients

  • 4 Bell Peppers
  • 1 Cup Cooked Macaroni
  • 2 Cups Chili
  • 1 Cup Shredded Cheese
  • 1 Tablespoon Olive Oil
  • Salt and Pepper to Taste
  • Optional Toppings: Sour cream, diced green onions, fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Combine cooked macaroni, chili, and half of the cheese in a mixing bowl.
  4. Stuff each bell pepper with the mixture and place in a baking dish.
  5. Drizzle olive oil and season with salt and pepper.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10 minutes.
  8. Serve warm with optional toppings.

Notes

Make-ahead tips: Prepare the filling in advance and store in the refrigerator until ready to bake. Can be made in an air fryer at 375°F for 15-20 minutes.
