- 4 Bell Peppers
- 1 Cup Cooked Macaroni
- 2 Cups Chili
- 1 Cup Shredded Cheese
- 1 Tablespoon Olive Oil
- Salt and Pepper to Taste
- Optional Toppings: Sour cream, diced green onions, fresh cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Combine cooked macaroni, chili, and half of the cheese in a mixing bowl.
- Stuff each bell pepper with the mixture and place in a baking dish.
- Drizzle olive oil and season with salt and pepper.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10 minutes.
- Serve warm with optional toppings.
Notes
Make-ahead tips: Prepare the filling in advance and store in the refrigerator until ready to bake. Can be made in an air fryer at 375°F for 15-20 minutes.
